Tried this cake several times - always turns out lovely, and is so easy to make:
you will need a lined or buttered loaf/cake tin whichever,
and your oven set at 180°C
Ingredients:
250g yogurt (flovoured or not)
250g any type of plain flour
100g sugar
80g cooking oil
2 eggs
2 tspns baking powder
1/2 tspn vanilla essence (optional) I dont care for it so I left it out!
Mix the flour and baking powder together in a bowl.
Separately mix egg, sugar,vanilla essence, oil and yogurt all together - a spatula will do, no need to get the mixer out!
Add dry mixture to wet mixture and blend well until smooth (no lumps) yet again spatula will do.
Bake for about 35-40 mins or until you poke it with a knitting needle or the like -and it comes out clean.
While I was writing this I suddenly thought "mmm lemon icing would be nice on top"
Think I will make one tomorrow!
